Makes enough for 10 guests

For the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Drink (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Directions

Making the Cordial: Put the listed components in a pot, bring to a simmer, mixing until the sugar dissolves. Next, turn off the stove allowing it to reach room temperature entirely. Pour into a clean bottle, seal and refrigerate it chilled, where it will keep for up to one month.

To make Batch Mix: Combine all the liquid ingredients in a sizeable container, let it rest for one hour, then strain best through muslin, to ensure it's perfectly clear.

For serving: Pour 85ml from the premix into your cocktail shaker filled with ice, and stir carefully for a minute until cold. Filter into an frosted cocktail glass or similar, decorate with a few cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
